Pikelets version 2 double and metric converted

Delicious Pancakes (Doubled Recipe)
This recipe makes twice the amount of pancakes, perfect for sharing or if you're extra hungry!


Ingredients
 * 1 1/2 cups (370 ml) milk
 * 2 eggs
 * 2 cups (300 g) plain flour
 * 2 or 4 tsp baking powder (depending on how much you want them to rise)
 * 2 tablespoons caster sugar
 * 2 pinches of salt
 * Butter for cooking and serving


Method
 * Whisk the 1 1/2 cups (370 ml) of milk and 2 eggs together in a small bowl.
 * Sift the 2 cups (300 g) of plain flour, 2 or 4 tsp of baking powder, and 2 tablespoons of caster sugar together with 2 pinches of salt. Then, add the dry ingredients to the wet ingredients and mix until smooth.
 * Heat a non-stick frypan and add some butter. Drop some spoonfuls of the mixture into the pan, and cook for about 2 minutes or until bubbles appear on the top.
 * Turn over and cook on the other side for about 1 minute; it should be golden when cooked.
 * Allow to cool slightly and add some butter to serve.
